Regular Pistachio Kernel
Regular pistachio kernel is a complete kernel which its shell has removed. It doesn’t have any additive; so it’s pure and the delicious one. There are two kinds of pistachios: opened shell pistachios and closed shell pistachios. Regular pistachio kernels can be taken from both of opened and shelled pistachios. If the regular kernels have been harvested earlier and they don’t have ripen, we call them kal/kaal pistachio kernels.
Open shelled pistachio kernels have attractive color and size. They have cracked by hand; thus the process of removing shell would take a longer time and its price is higher than close pistachio kernels. Open shelled pistachio kernels are sufficient for confectioneries, especially where the pistachios must be powdered as they use in cakes and Baklava.
Closed shell pistachios move to factory and they will be cracked and the kernels extracted. The whole process is done automatically and nobody touch it. Their color is lighter than open shelled kernels but the price is more affordable. They are suitable for ice cream, dessert and different kinds of cakes, in chocolate industry and of course bakery.
