Pistachio Fereni recipe

Pistachio fereni is one of the delicious and nutritious desserts in Persian recipe. Iranians cook it as in Ramadan or eat it for breakfast. in addition, because it has filled with Pistachio, is a nutritious one.

How to Prepare Pistachio Fereni

1- Pour the cold milk into a bowl and add the rice flour or cornstarch. Mix the milk and flour well so that it dissolves completely and does not become lumps. Add the rice flour little by little and stir constantly to make sure the flour dissolves well.

2 – Add the milk and rice flour mixture into a non-stick pan and place over a gentle heat. Gradually add up sugar and mix well until the it thickens.

3 – While the rice flour or starch Fereni thickens, add rose and pistachio powder and mix well. Do not allow the dessert to thicken. It will thicken and harden when cooled.

4 – When the it has reached the desired density, you can remove it from the heat.

Important Points

You can also use wheat flour in cooking this dessert. If you wish, add a tablespoon of wheat flour to the Fereni ingredients to make your Fereni more firm.

This delicious dessert can be prepared with both slices and Pistachio powder and there is not much difference in its quality.

To make the dessert more delicious for babies or adults, you can add about two tablespoons of cream in the last step and after removing it from the heat, to the required Fereni ingredients. Note that the cream must reach room temperature and lose its original hot Fereni so that the cream is not cut.

  • 2 tsp rice flour
  • 2 Cups of Milk
  • 2 tablespoon Sugar
  • Pinch of ground Cardamom
  • Slivered Pistachio for garnish
  • Rosewater
  • Pistachio powder
