Green peeled pistachio kernel is an unripe pistachio crop; It’s harvested early from orchards when the kernel still is green and has not changed to light green. they have obtained from closed pistachio kernels. Also they are known as skinless or peeled kernels and you can find them in several grades.
Green peeled kernels have strong aroma and flavor. Indeed the greener kernels, have the higher prices. They are more expensive than the other types of pistachio kernels due to costly process. Green peeled pistachios pick after the kaal/kal pistachios.
These type of pistachio kernels have their own especial usage: they can be used in various industries such as: pastries, chocolate, ice cream, sausages and ham or luxury desserts.
In the first step the unripe kernels are harvested and then green seeds sun-dried and shelled. In the second step the pistachios boiled in the water and the outer layer peeled off; and the last step green kernels sorted in different grades according to their greenness. The unripe crops have better green hue. They are harvested half-ripened and fresh ones that have no additives and ready for exporting.
